New Technology Garri Processing In Ghana

Gari is made from cassava which are peeled, grated, left to ferment and then fried in a dry pan.gari is very popular among Ghanaians home and abroad as well as some people in the West African Sub-Region, such as Nigerians, there has not been much improvement in the equipment used in processing it.Bizoe is a production manufacture of the garri processing machine in China. 

Method of Garri Production Process 

Gari is traditionally made at home in Ghana. It is made from cassava. The tubers are harvested, peeled, and grated in a grinding machine.

The grated pulp is then put into a jute sack which is tied or stitched and left to ferment for three to seven days. This step is very important, as the fermentation process helps to reduce and detoxify the high cyanide content of the cassava. 

The sacks containing grated cassava are packed on each other with a wooden board placed below and above them. The boards are tied together with the sacks full of the grated cassava in between. Tension is created by tightening the rope to allow fluid to drain from the grated pulp. 

After this, the pulp is left for three days to dry. The fluid that is drained from the pulp is very rich in starch. It is collected into a basin and left to sediment resulting to pure raw starch. 

 The fermented and dried grated cassava is sieved to remove the large particles and other unwanted items and the smaller grains and collected for frying. The frying process requires continuous stirring to ensure that the gari doesn’t get burnt and also turns out crispy.
